You may be referring to the little ';experiment'; often performed in High School Physics or Chemistry classes.
A glass of water is held in the Professor's hand. He puts a firm flat rigid object like a square piece of plastic over the top covering the glass and then flips it upside down and releases. The glass stays as is and the water remains in the glass.
This is one of hundreds of ';amazing'; scientific feats which do not involve magic or voodoo, but scientific principles. So, what keeps the water from gushing out of the glass?
Two principles: vacuum pressure within the glass and air-pressure without which equalize each other.
Now when a man can flip a glass of water upside down without a lid or cover on it and hold it there for 30 seconds or more without the water flowing out, I'd call it Voodoo.
I love the famous ';Levitating Faucet trick'; which I observed at a Ripley's Museum. It also involves science [the science of illusion] and not any real magic.

No Voodoo here, just clear plastic or glass tubing! This is a great illusion which really baffles 'em esp. the children. Water flows up the tubing which also supports the faucet and then flows down the outside concealing the tubing. It looks like a faucet suspended in mid air and connected to nothing is continually producing water.
There are ton's of ';magic'; tricks that only aren't really magic but involve physical science like the bed of nails trick. You'll notice few brave men lying on a bed of nails that has only ONE nail. This little hint will show you what's going on in that trick.
There are thousands of these.
My Chemistry professor was also a stage illusionist. He'd take a glass of ordinary water. Bonk it with a cane, and it would turn blue, then bonk it again, pink, then again and back to water's normal state. How did he do it?
Not by Voodoo, but by clever trickery and the principles of Chemistry.
The scientist is capable of more tricks than any Master of Voodoo could dream of. But there is a difference. The scientist aims to inform and educate, the Voodoo practitioner and other occultists aim to take your hard-earned money for their services. They aim to deceive.
It's merely a simple exercise in Physics!
