Does anyone have a recipe for ';glass/clear noodles'; found mostly in ';box lunches'; in Hawaii?

If anyone remembers ';Woolworths'; they used to sell those noodles in the in the snack bar area with the fried chicken.Does anyone have a recipe for ';glass/clear noodles'; found mostly in ';box lunches'; in Hawaii?
There are a couple of websites with some information on the making of those noodles. They can also be called cellophane noodles or mung bean noodles, I believe.





My suggestion: 2cups mung bean flour to 1/2cup water or you can get them in any Asian supermarket.Does anyone have a recipe for ';glass/clear noodles'; found mostly in ';box lunches'; in Hawaii?
Sure, I remember Woolworths in the Maui Mall! That was Chicken Long Rice and here is the recipe.





Ingredients:


1 whole Fryer cut up or regular bag chix parts


2-3 bundles Long rice http://fjhaolun.en.alibaba.com/product/5鈥?/a>


2 cloves Garlic, crushed


Quarter-size Ginger root, crushed Salt %26amp; pepper to taste


Shiitake mushrooms (optional)


Water or 2-3 cans chix broth


Green onions to garnish


Cooking Instructions:


Soak long rice and shiitake mushrooms in warm water for 15 minutes or when soft. Brown garlic. Boil chix in pot with water, filled just about covering chix, til tender. Drain water and replace with chix broth, add remaining ingredients and simmer for 15-20 minutes stirring ocassionally. Garnish with green onions and season with shoyu (soy sauce) to taste.
